    Jalapeño Jack Chili Mac and Cheese

    Jalapeño Jack Chili Mac and Cheese combines the flavor you love of chili with the creaminess you crave from mac and cheese for a spicy pasta dish that comes together in under 30 minutes in one pot!

    ground beef

    vegetable broth

    roma tomatoes, diced

    8-ounce package quinoa elbow

    jalapeño jack cheese

    salt and pepper to taste

    cilantro, chopped
    Directions
    In a large pot on medium heat melt coconut oil. Add beef and spices. Cook, breaking up beef as needed, until browned and cooked through.
    Add veggie broth and tomatoes. Cover and bring to a boil.
    Once boiling, add quinoa elbows and press down to ensure pasta is completely covered. Bring to a boil, then reduce to simmer and cover. Cook according to package instructions or until desired tenderness.
    Remove from heat and stir in cheese. Continue stirring until melted and evenly distributed, adding more if desired.
    Season with salt and pepper to taste. Garnish with fresh cilantro and serve.
