    Jalapeño and Caramelized Onion Oats

    Spicy, creamy, and oh so savory, these Jalapeño and Caramelized Onion Oats are great on their own or perfect as a side to grilled steak or roasted chicken.


    Ingredients
    3/4
    cup
    rolled oats
    1 1/4
    cups
    water
    1
    tablespoon
    coconut oil
    3
    tablespoons
    chopped onion
    1
    tablespoon
    minced jalapeño
    1/2
    teaspoon
    black pepper
    1
    unsalted butter
    *
    salt, to taste
    Directions
    In a sauce pan on medium heat combine rolled oats and water. Cook until mixture begins to thicken.
    Meanwhile, in a small fry pan warm coconut oil and add onion and jalapeño. Cook until onion has softened and jalapeño is crisp on edges.
    Fold in half of onion and jalapeño mixture and black pepper into oatmeal, then remove from heat and set aside.
    Season with salt to taste. Plate and top with tab of butter and remaining onion and jalapeño mixture.
