    Give your french toast Latin flavor with the addition of strong, dark espresso and keep it light with Greek yogurt and sweet bananas

    large egg whites
    2
    tablespoons
    brewed espresso
    1
    tablespoon
    honey
    1
    teaspoon
    vanilla extract
    1/2
    teaspoon
    ground cinnamon
    8
    slices honey wheat bread
    2
    ripe bananas
    1/2
    cup
    nonfat Greek yogurt or kefir
    Directions
    Preheat oven to 200 degrees F. Whisk the egg whites, espresso (if using), honey, vanilla, and cinnamon together in a large bowl until well combined.
    Spray a large nonstick skillet with cooking spray and heat over medium heat. In batches, dip the bread in the egg mixture, making sure to cover all side. Place the bread in the skillet and cook until the underside is golden brown, about 3 minutes. Flip the bread over and cook until the other side is golden brown, about 3 minutes more. Transfer the torrijas to a platter and keep warm in the oven.
    Mash the banana in a bowl with a fork. Mix in the yogurt.
    Serve the torrijas warm topped with the banana-yogurt mixtures.
