    Humitas

    A traditional recipe that every Ecuadorian cherishes, humitas are fresh corn cakes served savory (with a mixture of sauteed onions and peppers) or sweet (with a liberal dousing of sugar).


    Ingredients
    12-14
    corn husks, dried or fresh
    1
    14-ounce can of whole corn kernels, drained
    1
    14-ounce can of creamed corn
    1
    egg
    1
    tablespoon
    white sugar
    1
    teaspoon
    baking powder
    3
    cups
    grated or shredded mozzarella cheese
    1-2
    cup
    cornmeal
    Directions
    Boil the corn husks until pliable. Then turn heat off to cool completely.
    In a blender or food processor, add in the drained corn kernels, creamed corn, and egg. Puree until smooth.
    Pour mixture in a big bowl. Stir in the white sugar, baking powder and mozzarella cheese. Add in cornmeal a cup at a time until the mixture becomes thick.
    Spoon about a 1/4 cup of the corn mixture into 2 to 4 overlapping corn husks. Carefully fold into a packet and tie each one with twine.
    Cover each humita packet with aluminum foil so there is no leakage.
    Set up a steamer and steam humitas for an hour, then let cool for 10 minutes before serving.
