Huevos a la Mexicana

Huevos a la Mexicana

Named after the colors of the ingredients resembling the Mexican flag, huevos a la Mexicana can be enjoyed with just about anything.  Serve them with re-fried beans, fried potatoes, fried cheese, avocado chunks and let's not forget, lots and lots of tortillas. 


Ingredients

large eggs, beaten
1
jalapeño, finely diced (include seeds for added heat)
1/2
medium onion, diced

Roma tomato, diced

tablespoons
canola oil (or a light spray of cooking spray)

salt and pepper to taste
Directions
Heat oil in a medium skillet on medium heat.
Add in onion and jalapeño chile and sauté for 2 minutes, stirring constantly. Add diced tomatoes and cook for 1 minute more.
Season beaten eggs with salt and pepper and pour over vegetables. Reduce heat to medium low. Gently fold eggs until firm and thoroughly cooked, without sticking to pan. Serve immediately with tortillas.
