    Hot Tomato Salsa

    This Hot Tomato Salsa uses fresh tomatoes, garlic and chile flakes to create the perfect blend of savory and spicy. Use it to top tacos, to eat with chips, or serve it with runny fried eggs for a great brunch. 


    Ingredients
    4
    large vine-ripened tomatoes, coarsely chopped
    1/2
    red onion, coarsely chopped
    2
    garlic cloves, chopped
    *
    juice of 1 lime
    2
    teaspoons
    dried chile flakes
    2
    teaspoons
    chile sauce
    1
    tablespoon
    red wine vinegar
    *
    salt and freshly ground black pepper to taste
    *
    a few sprigs fresh parsley, finely chopped
    Directions
    Place all the ingredients, except the parsley, in a food processor. Blend carefully to keep the mixture chunky.
    Stir in the parsley, season to taste and refrigerate until needed.
