    Hot Pickled Brussels Sprouts

    Hot Pickled Brussels Sprouts is worth a try - spicy little snacks that are terrific as a cocktail tapa. Complete with chile de arbol and peppercorns, these light bites can jazz your lunch, while keeping your diet on track.

    fresh brussels sprouts

    cups
    water

    cups
    white vinegar

    dried chile de arbol
    2
    cloves
    garlic, peeled
    1
    tablespoon
    canning salt
    1
    teaspoon
    whole peppercorns
    Directions
    Trim dry ends off of brussels sprouts, and wash well.
    Meanwhile, bring the water and vinegar to a boil in a 2-quart saucepan.
    Add the remaining ingredients, stir once or twice, and then simmer for 2 minutes.
    Remove from heat, and then add the brussels sprouts.
    Allow the contents of the saucepan to cool completely.
