In a large mixing bowl, mix all of the ingredients for the turkey burger. Grind all the ingredients together and form into an 8 ounce patty.
Preheat oven to 350 F.
Using a small sauté pan, add 1 ounce of canola oil to the pan and allow it to heat until smoke point.
Season the turkey patty with salt and pepper and add it to the sauté pan allowing it to cook for 2 minutes on each side. Finish the turkey burger in the oven at 350 degrees for 5 more minutes allowing it to cook through.
Toast the brioche bun and combine ingredients to make Harrissa Aioli.
Add jack cheese slices to the turkey burger and cook for another minuet in oven until everything is melted.
Combine ingredients for guacamole, mixing thoroughly until creamy and combined.
To plate burgers: Slather aioli on bur, place burger, and top with arugula. Then top generously with guacamole and add top bun. Skewer the burger with a slice of pickle and pepperoncini. Serve.
