    Heirloom Tomato Gratin

    This rustic vegetarian Heirloom Tomato Gratin is a simple dish with tomatoes, olive oil and habanero jack cheese baked to a gooey perfection. Serve it with crusty bread and wine to keep you warm on cold nights.

    small yellow onion, thinly sliced

    heirloom tomatoes, sliced 1/4 inch thick

    unsalted butter, melted

    habanero jack cheese, shredded
    Directions
    Preheat oven to 425 F. Spray baking dish with oil and set aside.
    In a small sauté pan on medium heat add olive oil and onion. Cook until onion is translucent and fragrant.
    Arrange tomato slices in baking dish slightly overlapping. Sprinkle a bit of onion between every few slices and continue arranging until the dish is full.
    Season tomatoes with salt and pepper, then brush tops with melted butter.
    Sprinkle tomatoes with habanero jack cheese on top, then transfer to oven.
    Bake gratin for 20-25 minutes, until cheese begins to brown.
    Remove from oven and let rest for a few minutes before serving.
