Hearty Coriander Chicken Stock

Forget store bought stock and make your own! This Hearty Coriander Chicken Stock makes use of your roast chicken bones and adds garlic, ginger, pink peppercorns, cilantro and coriander to make an aromatic and flavorful stock you can use in soups, stews, chilis and a whole lot more!


Ingredients

chicken carcass, broken into pieces

garlic paste

ginger paste

small yellow onion, quartered
1 1/2
teaspoons
Pink Peppercorns

teaspoon
Coriander Seeds
1/4
cup
cilantro, stems and leaves

teaspoon
salt

Directions
In a large dutch oven on medium heat add all ingredients. Add enough water to cover chicken with 3 inches of water.
Bring stock to a simmer and allow to simmer uncovered for about 4 hours.
Strain stock and store in air-tight glass jars or freeze for later use!
