    Heart of Palm Salad (Ensalada de Palmito)

    Iceberg lettuce slathered in mayo-based dressing is so 1970. Bring your concept of salad to the new millennium by combining your favorite healthy veggies. Edamame make a tasteful appearance in this recipe, nestled among buttery bits of palmito, avocado and zesty tomato.

    Enjoy this salad as a vegetarian entree, or add some tuna, chopped chicken or steak for a protein boost.

    shelled edamame (soy beans)

    ripe tomato, sliced

    avocado, peeled, seeded and cubed

    Dressing

    Directions
    Place the hearts of palm, edamame, tomato, avocado and onion in a 2 quart salad bowl. Whisk together the dressin ingredients, and pour over salad and toss right before serving.
