    Healthy Lentil Stew

    Hearty Lentil Stew is a filling vegetarian meal packed with quick cooking and satisfying potatoes, carrots, and squash. Fresh herbs, garlic and zesty jalapeno kick up the flavor while creamy avocado adds a cooling touch.


    Ingredients

    14-ounce package dry lentils

    red onion, chopped

    carrot, peeled and cut into 1-inch pieces

    small potato, cubed
    1/2
    leek, cut into 1-inch pieces

    squash, cubed

    cloves
    garlic, finely chopped
    1/2
    jalapeño, finely chopped

    tablespoons
    mixed chopped fresh herbs (such as thyme and rosemary)

    quart
    vegetable stock
    1
    8-ounce can tomato sauce

    kosher salt and freshly ground black pepper

    ripe avocado, diced, for garnish
    Directions
    Place the lentils in a saucepan and cover with water. Bring to a boil and cook for 3 to 5 minutes. Drain.
    Heat the oil in a pot over medium heat. Add the onion and cook, stirring occasionally, until lightly colored. Add the carrot, potato, leek, squash, garlic, jalapeno, and herbs. Continue to cook until the vegetables are lightly browned.
    Add the stock, tomato sauce, and lentils. Season with salt and pepper.
    Bring soup to a simmer. Cover and cook until lentils and vegetables are tender, about 1 hour.
    Adjust seasoning with additional salt and pepper and garnish with diced avocado.
