    Ham and Sweet Potato Hash

    An easy breakfast recipe that can be made for a few or a crowd, this Ham and Sweet Potato Hash combines sweet and savory to perfection. Serve in a skillet and let guests decide their portion or plate in individual ramekins and top with an egg.

    canola oil

    medium sweet potatoes, peeled and cut into 1/2-inch pieces

    ham, cut into 1/2-inch cubes
    1/2
    white onion, finely chopped
    1
    green bell pepper, diced
    1/2
    teaspoon
    red pepper flakes
    1/4
    teaspoon
    freshly ground black pepper
    1
    cup
    shredded Oaxaca or Muenster cheese
    1
    teaspoon
    unsalted butter
    4
    large eggs

    Directions
    Preheat the oven to 375 F. Heat large cast iron skillet on stove. Add 2 tablespoons canola oil. Over medium heat, pan fry the sweet potatoes until lightly browned, about 7 minutes.
    Add the remaining 1 tablespoon canola oil, ham and onion to the same pan and fry additional 5 minutes.
    Add green pepper and fry another 2 minutes. Add the red pepper flakes, pepper and salt and combine. Sprinkle the shredded cheese over sweet potatoes and ham.
    Transfer the skillet to the oven and bake for 10 minutes.
    While hash bakes, heat the butter in a second skillet and fry the eggs.
    Remove hash from oven and plate 4 individual servings in medium-sized ramekins. Top each with a fried egg and serve immediately.
