    Guava and Queso Fresco French Toast

    This Latin breakfast recipe puts a delicious twist on traditional French Toast by adding tangy guava and creamy queso. Parents love it because it’s a wholesome and easy recipe; kids love it because it tastes great.

    whole wheat bread

    thinly sliced fruit, berries, or low-sugar preserves

    cup
    fresh guava sliced or diced (or guava fruit preserves)

    skim milk queso fresco, thinly sliced
    Directions
    In a large bowl whisk eggs, cinnamon and milk together.
    Cut each piece of bread into 4 pieces with a knife or cookie cutter. Dip bread in egg mixture, moistening both sides. Heat a non-stick pan and coat with cooking spray. Cook bread 2 to 3 minutes on each side until golden brown.
    Spread fruit and guava on one side of each slice of bread. Place cheese on top of the fruit. Cover with a second piece of bread. Repeat with remaining bread, cheese and fruit. Serve with fruit.
