    Grilled Pineapple and Chorizo Flat Bread

    Our Grilled Pineapple and Chorizo Flat Bread with smoked chorizo, smokey pineapple and spicy jalapeño is delicious and quick and easy to put together.


    Ingredients

    pineapple quarter, peeled

    sunflower oil

    flat bread
    1

    Olive Oil

    fresh cilantro, chopped

    ounces
    fresh mozzarella cheese, sliced
    8
    slices smoked chorizo, thinly sliced
    1/2
    jalapeno, thinly sliced

    teaspoon
    salt
    Directions
    Preheat oven to 400 F. Preheat grill pan on medium high heat.
    Brush pineapple with sunflower oil and place on grill pan. Grill each side for 2-3 minutes, until char marks form. Chop pineapple into slices. Reserve 1/4 cup for flatbread and store remainder in fridge.
    Brush flat bread with olive oil and sprinkle with 2 tablespoons cilantro.Top flat bread with mozzarella, chorizo, pineapple, and jalapeño.
    Sprinkle flat bread with salt and transfer to oven. Bake for 15 minutes, until mozzarella has melted and edges of flat bread are crisp.
    Garnish with remaining cilantro before serving.
