    Grilled Beef, Cheese, and Avocado Tostadas

    Northeastern Mexico is the land of beef. Barbecues are a weekend ritual in many homes and when there is a barbecue, there are leftovers. That’s the perfect scenario for these Grilled Beef, Cheese, and Avocado Tostadas or Tostadas Piratas. They can either be part of the barbecue or make a delicious (and fast) lunch the next day.


    Ingredients

    corn tortillas
    3
    cups
    Monterey Jack cheese, shredded
    2
    cups
    grilled steak, cut into chunks
    1
    avocado, thinly sliced

    salsa of your choice
    Directions
    Heat tortillas on a griddle over medium low heat.
    Place a mound of shredded cheese on each tortilla. Once it starts to melt, top with chunks of steak. Continue to cook until cheese is completely melted and tortilla starts to get crunchy.
    Serve hot garnished with avocado slices and topped with salsa.
