    Green Spicy Potatoes (Papas Verdes Picantes)

    Retire your go-to mashed potatoes and punch up the spice with Papas Verdes Picantes, a side dish that combines roasted diced potatoes with a cayenne, ancho chile and black pepper chimichurri sauce for just the right amount of heat.

    Chimichurri Sauce

    cayenne

    cup
    Olive Oil
    4
    cloves
    garlic

    fresh parsley, chopped without stems
    Directions
    Preheat oven to 400ºF.
    In an oven safe dish add potatoes, 1 tablespoon olive oil, 1/4 teaspoon chili flakes, 1 teaspoon salt and 1 teaspoon fresh cracked black pepper. Toss with hands until each potato is evenly coated.
    Roast potatoes for 45 minutes or until cooked through and crisp on the edges.
    For the spicy chimichurri sauce: Add 1 teaspoon salt, 2 teaspoons black pepper, ancho chile, 3/4 teaspoon red chili flakes, cayenne, garlic and parsley to food processor.
    Pulse and slowly add 1/2 cup olive oil. Pulse until all ingredients come together and sauce forms. Add up to 2 tablespoons more olive oil if necessary.
    Remove potatoes from oven and dress with 1/4 cup chimichurri sauce. Serve warm.
