    Green Pepper Frito Pie

    Dive in and feed the family with classic cowboy cuisine like Green Pepper Frito Pie. Worcestershire and red enchilada sauces give it spice; beef, onion, and bell pepper add bulk; and Frito corn chips add crunch. Home on the range never tasted so good.


    Ingredients

    pounds
    ground beef
    1
    yellow onion, chopped
    1
    large green bell pepper, chopped
    1
    cup
    diced tomatoes
    3
    tablespoons
    worcestershire sauce
    1
    15 ounce can red enchilada sauce
    *
    salt and pepper to taste
    2
    cups
    cheddar cheese, shredded
    3
    cups
    frito corn chips
    Directions
    Preheat oven to 350°F.
    In 12-inch cast iron skillet (or other oven-safe skillet), begin browning meat over medium heat.
    When meat starts to brown, stir in onion and green pepper. Continue cooking, stirring occasionally, until meat has browned completely, about 10 minutes. Drain grease.
    Reduce heat to medium-low and stir in tomatoes, Worcestershire and enchilada sauces, and salt and pepper to taste. Simmer 5 minutes, stirring occasionally.
    Remove from heat and sprinkle cheese evenly over meat mixture.
    Place skillet in oven and bake 5 to 10 minutes, or until cheese melts.
    Sprinkle Fritos evenly over top. Lightly press Fritos into pie and serve.
