Green Onion and Chorizo Quesadilla

Green Onion and Chorizo Quesadillas are a great quick-fix meal with caramelized onion, roasted red pepper, green onions, smoked chorizo and spicy habanero jack cheese.


Ingredients

burrito size tortillas

cup
diced smoked chorizo

chopped green onions
1/2
cup
shredded mozzarella
1/2
cup
shredded habanero jack cheese

cup
onion, caramelized
1
sliced roasted red pepper
Directions
Preheat non-stick pan on medium heat. Warm tortillas on pan, 1 minute per side. Set tortillas aside.
In a bowl combine smoked chorizo, green onions, mozzarella, habanero jack, caramelized onion and red pepper. Mix until all ingredients are evenly distributed.
Place one tortilla in pan and top with half of cheesy chorizo mixture. Top with another tortilla. Cook for 5 minutes, until crisp, then flip and cook for an additional 3 minutes. Once both sides are crispy, set aside and repeat for second quesadilla.
Slice each quesadilla into quarters and garnish with cilantro. Enjoy warm with pico, guacamole or all on its own.
