    Grapefruit Mojito

    Grapefruit and mint are a perfect union in this mojito.

    golden or dark rum

    Directions
    Using a sharp paring knife, peel 2-3 large slivers of grapefruit peel, removing only the outer yellow peel, and avoiding the white, bitter pith.
    Cut the grapefruit in half. You will only need the juice of half of the grapefruit, so reserve the other half for another recipe (or another mojito!)
    Place half of the peel in a glass measuring cup, adding only 1 tsp of raw sugar, and half of the mint leaves. Using a wooden spoon or muddler, crush the peel, leaves and sugar together, so that the delicate oils are released, about 30 seconds. Try not to tear the mint leaves.
    Add the remaining peel, sugar and mint leaves, and crush for another 30 seconds. Squeeze in the juice of half of the grapefruit, and mix well until the sugar is completely dissolved.
    Pour the contents of the measuring cup into a cocktail glass, straining out the peel and mint.
    Add the ice, and pour in the club soda.
    Using a long stirring spoon, stir the mojito once or twice before serving.
