    Gluten-Free Panela Golden Raisin Bread

    Being gluten-free doesn’t have to be the end of your love affair with bread. If you love cinnamon, crave raisins, and want to sink your teeth into a fluffy bread that’s slightly sweet without the wheat try Panela Golden Raisin Bread. It’s vegan too, so indulge guilt (and gluten) free.

    apple cider vinegar

    Namaste’s perfect flour

    teaspoons
    guar gum

    raw sugar

    packet
    instant dry yeast

    teaspoon
    salt

    cup
    panela, grated
    2
    teaspoons
    cinnamon
    2
    teaspoons
    vanilla
    1/2
    cup
    golden raisins
    Directions
    Oil a 9 X 5 loaf pan and set aside.
    In the bowl of a stand mixer fitted with the paddle attachment add water, chia seeds, olive oil and vinegar. Mix on speed 2 until thoroughly combined.
    Sift flour, guar gum, sugar and dry yeast into a bowl. Set aside.
    Add the flour mixture, a little bit at a time, while continuing to mix on speed 2. Increase to speed 4 for 2 minutes.
    Add salt and mix at speed 2 for an additional 2 minutes.
    Add panela, cinnamon, vanilla and golden raisins to batter and mix on speed 1 for 30 seconds or fold the mixture into the batter by hand.
    Cover with plastic wrap and set aside in a warm place for 40 minutes. The dough will grow to almost double.
    Preheat oven to 350F. Bake bread for 1 hour and 45 - 55 minutes. Once cooked remove from oven and let rest in pan for 10 minutes.
    Remove bread from pan and transfer to wire rack until cooled completely.
