    Garlicky Red Bean Burgers

    Forget the meat and take a bite out of these Garlicky Red Bean Burgers that are filling, flavorful and pack a punch!


    Ingredients
    Red Beans

    15-ounce cans red beans or kidney beans, rinsed and drained

    tablespoon
    Olive Oil

    ground garlic

    teaspoon
    cumin
    1/2
    teaspoon
    paprika

    salt and pepper to taste
    Burger
    2
    tablespoons
    Olive Oil
    1/2
    cup
    yellow onion, diced
    1/2
    jalapeno, minced
    1 1/2
    tablespoons
    garlic paste
    1/4
    cup
    fresh parsley, finely chopped
    1
    cup
    sunflower seeds, roasted and salted
    1
    flax egg

    Additional Ingredient
    1/3
    cup
    pepper jack cheese

    hamburger buns
    Directions
    Preheat oven to 350F. Line a baking sheet with aluminum foil and set aside.
    In a small bowl combine ingredients for red beans. Adjust salt and pepper to taste.
    Transfer to baking sheet in a single layer, then bake for 20 minutes or until beans have split and look dry. Set aside.
    In a medium sized bowl combine all ingredients for burger. Set aside.
    In a food processor add red beans and pulse until chunky, about 8 pulses. Transfer beans to burger bowl and mix with hands until uniform. Season with salt and pepper to taste.
    Form mixture into 6 patties. Cook burgers on a well oiled skillet, 3-5 minutes per side, until crisp.
    Top burgers with cheese and slide on burgers buns. Enjoy with fresh salsa as well as your favorite burger toppings.
