    Fruit Gazpacho with Mango, Strawberries and Pineapple

    Sweet with a touch of salt, tangy and spiked with chile powder, this fruit gazpacho is an interesting end to any summer dinner party or picnic.


    Ingredients
    For the Sauce

    chopped pineapple

    chopped mango

    limes, juiced

    sugar or honey

    teaspoon
    chile powder

    teaspoon
    fine sea salt
    For the Gazpacho
    12
    ounces
    diced pineapple
    12
    ounces
    diced mango
    12
    ounces
    diced strawberries

    tablespoons
    finely chopped mint or basil

    Crumbed cookies, optional garnish
    Directions
    In a food processor, combine the fruits, lime juice, sugar and ½ cup water and process until smooth. Add chili powder and salt and process until just combined.
    Toss this mixture with fruit and mint. Serve over Tortilla strips or with crumbled hard cookies, like Mexican Wedding cookies or biscotti.
