    Frozen Coconut and Lime Layer Cake

    Layers of tangy coconut milk and lime a top of crunchy matzoh flatbread give this dessert its unique and delicious flavor and texture. 


    Ingredients
    1
    14-ounce can full fat coconut milk
    1
    cup
    confectioner's sugar
    1/2
    teaspoon
    vanilla extract
    1
    teaspoon
    lime zest
    1/2
    cup
    Lime Juice
    10
    pieces
    matzoh
    1/4
    cup
    shredded coconut, sweetened or unsweetened
    Directions
    Cover a 9 x13 in cake pan with parchment paper.
    In a blender, mix coconut milk, confectioner's sugar, and vanilla until well combined. Mix in the lime zest and juice.
    Place a single layer of matzoh flatbread onto of the parchment paper line pan. A piece and a half will do it. Cover with a thin layer of coconut and lime mixture, then layer on another piece of matzoh. Repeat until done.
    Finish with the coconut mixture and sprinkle with shredded coconut. Freeze for four hours or overnight.
