    Fried Sweet Plantains (Tajadas)

This dish has only two simple ingredients: overripe plantains and hot, hot oil. Follow this five-step guide for perfect fried plátanos every time.

    Heat vegetable oil over medium-high heat. (Tip: Test oil by dipping a plantain slice into the pan. Once it immediately bubbles, the oil is ready.)
    Meanwhile, remove ends and skin of plantains. Cut flesh on an angle, making slices ⅛-to-¼-inch thick.
    Once oil is hot, fry plantains, working in batches, until flesh is golden on all sides and edges are slightly burnt; transfer to a paper towel-lined plate.
    Let plantains drain on paper towels. Serve hot.
