    Fried Egg Rice Bowl with Pernil

    This Fried Egg Rice Bowl with Pernil is perfect for breakfast, lunch, or dinner thanks to the vegetable fried rice, tender pernil and perfectly fried egg.


    Ingredients

    thinly sliced zucchini

    carrot, thinly sliced

    onion, chopped
    1/2
    yellow pepper, chopped

    salt

    teaspoon
    black pepper, ground
    1/2
    cup
    rice, cooked
    1/4
    cup
    pernil, cooked
    1
    egg

    Directions
    In a sauté pan on medium heat add vegetable oil. Once it ripples, add zucchini, carrot, onion and yellow pepper.
    Once onion is translucent season with salt and pepper. Adjust seasoning to taste.
    Add rice to vegetables and mix until thoroughly combined.
    Once heated through, transfer rice to serving bowl and return pan to burner.
    Add pernil and water to sauté pan and cook until water evaporates and pernil is heated through.
    Top rice bowl with pernil and set aside.
    Add oil to a frying pan on medium heat.
    Once oil ripples, carefully crack egg into fry pan.
    Cook egg until whites are firm and yolk is soft and runny.
    Top rice bowl with egg, pierce yolk and serve.
