    Fresh Piña Colada on the Rocks

    Super hydrating and light coconut water is all the rage, so why not mix it into cocktails? In this twist on an iconic Latin cocktail, coconut water and pineapple are blended together and served on the rocks with rum for an extra refreshing cocktail.


    Ingredients

    cups
    chopped pineapple, fresh or canned
    1 1/2
    cups
    coconut water
    1/4
    cup
    Puerto Rican rum
    1
    cup
    ice, plus extra as needed
    Directions
    Place the pineapple and coconut water in the container of a blender, and puree well.
    Strain the mixture through a mesh strainer, pressing the puree to extract all of the liquid.
    Add the rum and ice, stir well, and pour into two cocktail glasses.
