    Ensenada Chicken Platter

    No more boring chicken dinners here. Two fire-grilled chicken breasts basted with authentic Mexican seasonings, topped with fresh salsa and creamy salsa-ranch. Serve with a side salad for a complete meal.

    chili powder

    cumin

    cup
    paprika

    oregano

    tablespoons
    onion powder

    tablespoons
    garlic powder

    teaspoons
    salt

    teaspoon
    ancho pepper powder
    1/8
    teaspoon
    cayenne

    boneless chicken breasts
    Directions
    Mix all ingredients together.
    Split chicken breasts in half and rub the chicken with mixture. Place seasoned breasts on the grill or non-stick ceramic skillet and cook them at a temperature of 165º. If using a skillet, cover with a lid to help the chicken cook thoroughly.
    Serve over green salad. Top with freshly squeezed lime and your favorite salsa.
