    Easy Green Burgers

    Pump up the green in your diet with these Easy Green Burgers that come together in a food processor and are ready in under 30 minutes!


    Ingredients

    cup
    onion, diced
    1
    tablespoon
    garlic, minced
    1/2
    cup
    broccolini, roughly chopped
    1
    cup
    zucchini, roughly chopped
    1/2
    jalapeno, minced
    1/2
    cup
    spinach
    1/2
    lime, juiced and zested
    10
    ounces
    canned pinto beans
    1 1/2
    cups
    Irish soda bread crumbs, or regular bread crumbs

    salt and pepper to taste

    1
    tablespoon
    coconut oil
    6
    burger buns, toasted
    Directions
    In a food processor combine onion, garlic, broccolini, zucchini, jalapeño, spinach, lime juice, lime zest, pinto beans and bread crumbs. Pulse until a thick, chunky mixture forms. Season with salt and pepper to taste. Add egg and pulse again until throughly incorporated.
    On a sauté pan on medium heat warm coconut oil. Divide burger mixture evenly into 6 patties. Pan fry patties in coconut oil until golden brown on each side.
    Serve burgers on buns with all your favorite toppings such as tomato, onion, avocado, lettuce, pico and guac!
