    Easter Squash Casserole

    You’ll wish this side was the main course on Easter Sunday. This dreamy, creamy Easter Squash Casserole is the dish to beat.


    Ingredients

    yellow squash, sliced 1/4 inch lengthwise

    cup
    cream
    1/2
    onion, diced
    2
    garlic cloves, diced finely
    1
    tomato, deseeded and chopped
    1
    teaspoon
    dried oregano

    Salt and Pepper
    3/4
    cup
    queso de Oaxaca, shredded
    4
    tablespoons
    Queso fresco
    Directions
    Preheat your oven to 400 degrees and butter 4 small casserole dishes.
    Salt the squash slices to remove excess moisture. Let sit for 10 min.
    In a small saucepan, simmer the cream with the onion, garlic, tomato, oregano, salt and pepper.
    Pat the slices dry with a paper towel and cut the slices to fit the casserole dishes
    Put down a layer of squash, top with cream, and Oaxaca cheese. Layer until the dish is full and top each with 1 tablespoon of queso fresco.
    Place the dishes on a baking sheet and bake for 30 minutes, rotating halfway.
