    Crushed Lemon Cilantro Potatoes

    A simple recipe packed with citrus flavor, these Crushed Lemon Cilantro Potatoes combine five ingredients to make an incredible side that is sure to steal the spotlight from the main dish at the dinner table.

    baby yellow potatoes

    butter

    tablespoon
    salt
    1
    lemon, halved and zested
    1/2
    cup
    Chopped Cilantro
    Directions
    In a large pot filled with salted boiling water cook potatoes until tender, about 20 minutes. Drain. Preheat oven to 425F.
    Place potatoes on a large, buttered baking dish. Carefully crush potatoes with a fork until the skins burst.
    Dab remaining butter over potatoes and sprinkle with salt and lemon zest. Bake for 20 minutes, flipping half way through, until crisp.
    Add cilantro and squeeze juice of 1/2 lemon on top. Toss to coat. Cut other half of lemon into thin slices. Plate potatoes and garnish with extra cilantro and lemon slices.
