    Creamy Garlicky Potato Mash

    Evaporated milk adds dairy richness without all the fat of heavy cream. Make sure you don't get condensed milk, which is sweetened.

    medium potatoes, peeled and quartered

    water

    cloves
    garlic, peeled

    bay leaves

    ounces
    evaporated milk

    butter
    1/2
    teaspoon
    salt
    1/4
    teaspoon
    freshly ground black pepper
    1/4
    teaspoon
    grated nutmeg
    Directions
    In a large saucepan, combine potatoes, garlic, bay leaves, and 6 cups water. Bring to a boil, reduce to simmer, cover, and cook until potatoes are tender.
    Remove bay leaves. Drain cooking liquid. Add evaporated milk, butter, salt, and pepper to potatoes. Return to medium heat cook, stir, until smooth and fluffy.
    Serve sprinkled with nutmeg.
