    Creamy Carrot Soup (Sopa de Zanahor)

    A great source of antioxidant compounds and has vitamin A, this creamy soup will even delight even the pickiest of vegetable eaters.


    Ingredients

    carrots
    4 1/2
    cups
    low sodium chicken or vegetable stock or broth
    1
    bay leaf
    1
    dash
    Salt and Pepper

    heavy cream
    Directions
    Cook carrots in chicken stock and bay leaf until fork tender. About 20-30 minutes.
    After, discard the bay leaf. Using a blender or hand blender puree till smooth.
    Season with salt and pepper. Serve warm with heavy cream
