    Cream of Poblano and Spinach

    You're only 20 minutes away from a mean, green, nutritious Mexican soup packed with so much spinach even Popeye would be jealous! 


    Ingredients

    tablespoons
    oil or butter
    1
    small onion, cut into chunks
    1
    poblano chile, seeded and stemmed, cut into large pieces
    1
    medium potato, cut into large pieces
    1
    bundle
    spinach
    2
    cups
    vegetable broth
    1/2
    teaspoon
    sea salt
    *
    freshly ground black pepper
    1/2
    cup
    frozen corn, for garnish
    *
    crema fresca, for garnish
    Directions
    In a 5-quart pot with a lid add butter and onion. Cool until translucent, about 5-7 minutes. Add the poblano chile and let cook for about 5 minutes.
    Add remaining ingredients, cover, and reduce heat. Let simmer for 15 minutes or until potatoes are cooked through.
    Add soup to blender and blend until smooth. Return to pot and warm, check seasoning. Serve with corn and crema fresca.
