    Cran Quinoa Stuffing

    Upgrade your usual stuffing for one that is sweet, tangy, and full of bite! Cran Quinoa Stuffing has fresh sautéd spinach with garlic, roasted acorn squash, dried cranberries and fruity avocado oil making this gluten-free stuffing one everyone can enjoy!

    quinoa, cooked and warm

    acorn squash, roasted and warm
    1/2
    cup
    dried cranberries
    2
    tablespoons
    avocado oil
    3
    cloves
    garlic, minced
    2
    cups
    spinach, packed
    1
    teaspoon
    minced jalapeño
    1 1/2
    teaspoons
    salt
    3/4
    teaspoon
    black pepper
    Directions
    Transfer quinoa to a large bowl.
    Remove skin from acorn squash and cut into bite-sized pieces. Add squash to quinoa bowl.
    Top quinoa bowl with cranberries.
    In a sauté pan on medium heat, add 1 teaspoon avocado oil. Add garlic, spinach, and jalapeño. Cook until garlic is golden and spinach has wilted.
    Top quinoa bowl with spinach mixture. Drizzle remaining avocado oil into bowl and sprinkle with salt and pepper. Stir until flavors are combined. Serve.
