Coconut Soda Bread Pudding

This Coconut Soda Bread Pudding is buttery and sweet. With a splash of Baileys Irish Cream, or two, it's sinfully delicious and perfect for any get together.

soda bread, cut into 1 inch cubes

unsalted butter, melted
2/3
cup
coconut milk
1/2
cup
brown sugar

egg
1/2
cup
coconut shreds
1/3
cup
baileys irish cream
Directions
Preheat oven to 350F.
Put soda bread in an oven safe baking dish. Set aside.
In a medium sized bowl whisk together butter, coconut milk, brown sugar, egg, coconut shreds, and Baileys.
Pour custard over soda bread and toss to coat. Allow to stand 10 minutes for maximum absorption.
Transfer pudding to oven and bake for 40 minutes, or until golden and crisp on top.
Serve pudding with ice cream, whipped cream, or simply a nip of Baileys.
