    Coconut Fried Ice Cream

    This sweet treat is a play on textures with a crunchy, deep fried shell. Served with cajeta and Mexican chocolate, it's the perfect summer dessert. 


    Ingredients
    1
    scoop
    toasted coconut ice cream
    1
    beaten egg
    1
    cup
    frosted flakes cereal, crushed
    *
    Mexican Chocolate Sauce and Cajeta for topping
    Directions
    Roll ice cream in beaten eggs until fully coated.
    Roll in crushed up cereal and pack in to build coating. Return breaded ice cream to freezer and let set overnight.
    When ready to serve, iip in oil heated to 350 degrees for 8-10 seconds. Top with cajeta and Mexican chocolate sauce.
