    Coconut Curry Chicken with Rice

    Directions
    In a sauté pan on medium heat melt coconut oil. Add onion, zucchini, and squash. Cook until onion is soft and translucent and squash is tender.
    Add spices, coconut cream, heavy cream, and flour. Whisk with vegetables until flour has dissolved into mixture. Lower heat and simmer until sauce thickens. Season with salt and pepper to taste.
    Stir in chicken. Cook until chicken is warmed through, then stir in parsley.
    Add 1/2 cup rice to each plate and top with a hearty helping of curry.
