    Coconut Chia Pudding with Fruit Coulis

    One chia pudding to rule them all! The sweet and tangy touch of fresh fruit coulis elevates this chia pudding to new heights, for a balanced and dynamic breakfast. 


    Ingredients
    For chia pudding:

    whole black ProactivChia seeds

    cups
    coconut milk

    dash
    vanilla extract

    maple syrup
    For field berry chia jam:
    3
    tablespoons
    ProactivChia seeds
    1/4
    cup
    maple syrup
    2
    cups
    frozen berries (thawed)
    Directions
    For the chia pudding: Put all of the ingredients together in a mason jar. Seal tightly and shake vigorously so that the chia seeds don't stick together at the bottom. Let sit for 30 minutes, shaking occasionally.
    For the jam: In a bowl, mix the ProactivChia and the maple syrup. Set aside and let sit for several minutes. Crush the thawed berries with a fork. For a smoother jam, blend the berries in your food processor. Pour the berries into the ProactivChia and maple syrup mix. Stir and let cool for 2 hours in the fridge.
