    Clay Pot Coffee (Café de Olla)

    Early in the morning, between November and December, when the wind blows cold outside, and the misty rain clutters your view from the window in the kitchen, that is the exact moment when you should make café de olla. Comforting like a grandmother’s hug, the spices wrap themselves around your kitchen, and make the world right.


    Ingredients

    quart
    water
    4
    whole cloves
    1
    stick
    whole cinnamon (preferably Mexican)
    1/2
    fresh orange, unpeeled
    2
    pieces
    star anise
    2
    ounces
    piloncillo (or 2 tablespoons packed brown sugar)
    3-4
    tablespoons
    ground coffee
    Directions
    Pour water into a 2 quart saucepan and add cloves, cinnamon, orange, star anise, and pilloncillo or brown sugar.
    Bring the water to a boil and simmer for 2 minutes. Add the coffee and simmer for 1 minute.
    Turn off the heat and allow the mixture to steep for 2 minutes.
    Remove the orange and whole spices and then strain the café de olla into a serving pot. Serve hot.
