In a saucepan on medium heat add apple, lime juice, agave, and 1 tablespoon sugar. Cook until apples have softened. Use a fork to mash apples into a chunky puree. Remove from heat and set aside. Turn on pan to medium-high heat.
In a medium bowl mix flour, baking soda, cinnamon, and remaining sugar.
In a separate bowl combine mashed apple, vegetable oil, milk, and vanilla.
Add wet ingredients to dry and fold until incorporated.
Using a 1/4 cup measure, pour batter into pan.
Once bubbles form on surface of pancakes, 2-3 minutes, flip. Cook until golden brown on both sides.
