    Cinnamon Agave Apple Pancakes

    Enjoy the flavors of autumn apple pie for breakfast! Cinnamon Agave Apple Pancakes combine that warm, ooey gooey goodness you love from apple pie filling with an extra touch of cinnamon, splash of lime, and drizzle of agave for a stack fit for breakfast or dessert.

    medium apple, peeled, cored, and diced

    Lime Juice

    tablespoon
    agave
    2
    tablespoons
    sugar
    1/2
    cup
    all-purpose flour
    1 1/2
    teaspoons
    baking soda
    1
    tablespoon
    cinnamon
    1
    tablespoon
    vegetable oil
    1
    cup
    milk
    1
    teaspoon
    vanilla
    Directions
    In a saucepan on medium heat add apple, lime juice, agave, and 1 tablespoon sugar. Cook until apples have softened. Use a fork to mash apples into a chunky puree. Remove from heat and set aside. Turn on pan to medium-high heat.
    In a medium bowl mix flour, baking soda, cinnamon, and remaining sugar.
    In a separate bowl combine mashed apple, vegetable oil, milk, and vanilla.
    Add wet ingredients to dry and fold until incorporated.
    Using a 1/4 cup measure, pour batter into pan.
    Once bubbles form on surface of pancakes, 2-3 minutes, flip. Cook until golden brown on both sides.
