    Cilantro Cauliflower Rice

    Adding cilantro to your new favorite low-carb side is an easy way to jazz up weeknight dinners.


    Ingredients
    4
    cups
    cauliflower florets
    2
    tablespoons
    extra virgin olive oil
    3
    cloves
    garlic, finely chopped
    1/2
    cup
    Sour Cream
    1/4
    cup
    chopped fresh cilantro
    *
    Salt and pepper, to taste
    Directions
    Place the florets in a food processor and pulse a few times until they become the size of rice. You can also grate the cauliflower. This should yield about 4 cups.
    In a bowl, combine the cilantro and sour cream. Season with salt and pepper to taste.
    In a large frying pan over medium heat, sauté the garlic until golden. Add the riced cauliflower and cook for 2 - 4 minutes or until tender.
    Turn off the heat and stir in the cilantro sour cream mixture. Serve immediately.
