    Chorizo-Topped Potato Skins

    Who doesn’t love baked potatoes? Bring Chorizo Topped Potato Skins to your next BBQ bash and rein in the compliments. No one needs to know the real secret: these delicious, cheesy skins are a snap easy to make!


    Ingredients

    russet potatoes
    2
    tablespoons
    butter
    1/2
    cup
    mozzarella cheese
    1/4
    teaspoon
    paprika
    1/2
    teaspoon
    salt
    1/4
    teaspoon
    black pepper
    1/4
    cup
    smoked chorizo, chopped
    1
    green onion
    Directions
    Preheat oven to 400 F
    Wash and dry potatoes. Using a fork, pierce the potatoes about 10 times evenly around the potato.
    Place potatoes directly on rack and bake for 50 minutes.
    Allow potatoes to cool slightly, then slice lengthwise and scoop out inside to create a boat with 1/2 inch sides. Transfer the removed potato inside to a bowl and place skins on a greased baking sheet.
    Add butter, cheese, paprika, salt and pepper to the bowl of warm potatoes that have just been removed. Mix until potato mixture is fluffy.
    Fill potato skins evenly with potato mixture and top with chorizo, then transfer back in to oven for an additional 10-15 minutes, until chorizo is toasted and the potato skins are crisp.
    Chop green onion and sprinkle on top of potato skins. Serve warm.
