    Chorizo Perico and Avocado Toast

    A simple breakfast or snack, Chorizo Perico and Avocado Toast combines scrambled eggs with peppers, onions, and smoked chorizo on a slice of toasted seed bread and tops it all with parmesan.

    minced smoked chorizo

    caramelized onions and peppers

    mashed avocado

    Lime Juice

    Directions
    Preheat sauté pan on medium heat. Add chorizo. Once chorizo begins to render some fat, add eggs, and caramelized onion and pepper mixture. Scramble eggs until light and fluffy. Season with salt and pepper to taste.
    Meanwhile, mix avocado with lime juice. Toast bread and spread with mashed avocado.
    Top toast with chorizo perico and sprinkle with parmesan cheese.
