    Chili Black Bean Pancakes

    Chili Black Bean Pancakes topped with fresh pico and a squeeze of lime juice are easy to prep, make, and eat ;making them a great option for when you're feeding a crowd!


    Ingredients

    whole wheat all-purpose flour

    tablespoon
    ground flax seeds

    tablespoon
    coconut oil, melted

    teaspoons
    baking powder
    1/2
    tablespoon
    sugar
    1
    cup
    milk
    1/2
    cup
    seasoned black beans
    1/2
    teaspoon
    cumin
    1/2
    teaspoon
    chili powder
    *
    pinch of salt
    1
    cup
    fresh pico
    1/4
    cup
    chopped parsley
    Directions
    Preheat a non-stick pan on medium heat.
    Add all ingredients, except for pico and parsley, to a bowl and whisk to combine.
    Pour batter and spread to create 3-4 inch diameter pancakes.
    After two minutes, once bubbles have formed and popped on the surface and the sides are puffed and solid, flip pancakes.
    Cook for another 2 minutes or until golden. Repeat until all batter has been used. Enjoy warm topped with pico and fresh chopped parsley.
