    Chicken With 40 Garlic Cloves

    Happily, some 1970's dinner party classics are making a comeback including Chicken With 40 Garlic Cloves - the traditional French dish which makes the most of garlic's sweet, rich flavor by cooking cloves encased in their skins. Once cooked, the cloves can be served as they are so that guests can squeeze garlic into their plates. Alternatively, use the extracted flesh to create a deliciously creamy sauce.


    Ingredients

    celery stalks, chopped

    large organic chicken

    large sprigs rosemary

    large sprigs thyme

    large garlic bulbs

    Olive Oil

    salt and freshly ground black pepper

    bay leaves
    1
    large carrot, diced
    1
    small onion, cut into wedges

    large glasses red cooking wine
    Directions
    Preheat oven to 375 F.
    Place the chopped celery, 1 sprig of each herb and a handful unpeeled garlic cloves into the chicken cavity.
    Place half the remaining cloves in a lidded casserole, put the chicken on top, brush with olive oil and season well. Arrange the bay leaves, carrot, onion and remaining herbs and garlic cloves around the chicken.
    Drizzle with olive oil then pour over the red wine. Cover and roast for at least 1 hour 20 minutes, or until chicken is tender and the juices run clear when the flesh is pierced with a skewer.
    Either serve with toasted bread, spread with the soft flesh of the garlic cloves or blend the garlic flesh with the juices from the bottom of the casserole to make a creamy sauce.
