    Chef LaLa's Shrimp Soup (Caldo de Camarones)

    A good broth for Caldo de Camarones comes from fresh ingredients. For added flavor, leave the shrimp in the shell while cooking. Shrimp is sauteed in garlic and onion and then simmered in homey chicken broth.

    medium carrot, peeled and diced small

    celery, diced small

    medium chayote squash, peeled and diced small

    (21 to 25 count) unpeeled shrimp

    Spice Islands® Bay Leaves

    water

    Mazola® Sobrecitos™ Chicken Flavor Bouillon Packets

    serrano chile pepper (optional)
    Directions
    Heat oil in a stock pot or large pan. Add onion and garlic; cook for 3 minutes until clear. Add carrots, celery and chayote. Cook for 5 minutes while stirring occasionally.
    Add shrimp, bay leaf, water, bouillon and Serrano pepper, if desired. Cover and simmer for 10 minutes.
