Ingredients

large sweet potato, peeled

large onion
1
bunch thin asparagus
2
red bell peppers

tablespoon
Olive Oil

piece Sirloin Beef for Fajitas from 1 twin pack Chef LaLa Sirloin Beef for Fajitas (approximately 5 pounds), available in select Walmart stores

butter
Directions
Slice all vegetables into 6-inch lengths, about the same thickness. Set aside.
Heat the oil in a medium skillet set over high heat and place a whole piece of meat into the pan. Cook for about 3 to 4 minutes on each side, or until medium rare inside (do not cook longer for easy rolling). Remove from pan and let rest for 5 minutes.
Heat the butter in a medium skillet. Add sweet potatoes and cook until tender. Remove from the pan and set aside. Add the asparagus, onion and bell pepper and cook until crisp tender. Remove from heat, set aside.
Slice the meat thinly, at a bias and against the grain. Lay about 2 pieces of each vegetable in the center of each slice of beef and roll tightly. You can use toothpicks or twine to tie them so they don’t unravel.
Working in batches quickly brown the rolls in a hot dry skillet taking care not to overcook the meat. Remove toothpicks or twine before serving.
