    Ceviche Stuffed Avocado

    This easy ceviche, tangy lime marinated fish dotted with tomato, onion and cilantro, is the perfect thing to be scooped into the hollow of a ripe creamy avocado. It is an easy and elegant appetizer.


    Ingredients
    1
    small fish fillet, about 4 ounces, such as tilapia or trout

    plum tomato, seeded and diced
    1
    tablespoon
    minced onions
    1
    tablespoon
    Chopped Cilantro

    extra-large avocados

    kosher salt and freshly ground black pepper, to taste
    Directions
    Cut the fish filet into bite sized chunks, about ½-inch sized cubes. Place the fish in a small mixing bowl, and squeeze in the juice of the limes. Allow to marinate in the lime juice for about 20 minutes, until the fish turns white and opaque.
    Once the fish is well marinated, add the tomato, onion and cilantro, and season with salt and pepper. Stir to combine.
    Cut the avocados in half, and remove the pit. Stuff each half of avocado with equal amounts of the ceviche. Spoon over a small amount of the marinating liquid. Serve immediately.
