    Cardamom Coconut Arroz con Leche

    Use leftover rice for a new take on a classic dessert. Cardamom Coconut Arroz con Leche is indulgent, luscious, and smooth with a subtle hint of cinnamon that keeps you coming back for more.


    Ingredients

    cooked and cooled brown rice
    1
    14-ounce can coconut milk
    1/2
    cup
    cream of coconut
    1 1/2
    teaspoons
    cardamom pods
    2
    sticks
    cinnamon

    ground cinnamon, for garnish
    Directions
    In a medium pot set over medium-high heat bring the cooked brown rice and 11/2 cups water to a boil. Reduce heat to a simmer and continue until all water is absorbed and the rice is very soft.
    In a separate pot combine coconut milk, cream of coconut, cardamom and cinnamon sticks. Bring to a boil then lower to a simmer. Simmer until fragrant, 10 to 12 minutes, then transfer to a blender and blend until smooth.
    Strain mixture through a sieve into the pot with rice. Simmer rice with coconut mixture, stirring continuously until thick and creamy.
    Serve with a dusting of ground cinnamon.
